Soooo... yesterday we went to the Magic Kingdom and had a lot of fun (despite the fact it's the busy season!). Today we went with mom and looked at the model homes in Celebration this morning - we always have fun doing that. Then we went to Epcot and ate lunch at Akershus (the Norwegian restaurant) - it was delicious. We hit all of the World Showcase shops and had a wonderful time. Later on we went to Disney's Boardwalk resort and ate dinner at the Brewery there - it was fun too. We've been having fun and the weather has been pretty good to us - not hot, not too rainy - just right.

I'll probably get some painting in tomorrow though ;) Just thought I'd check in - I know I've let my email pile up and I'm falling behind on my LJ, but I'll play some catch-up tomorrow!

We've been having a wonderful time - this is the first time my mom has ever been to Florida, so it's all new to her!

Awww, that is so sweet! =) My mom would NEVER do that =( But I work at a hotel, so I get free rooms here for them. (When they visit every five years, lol). Hey, anytime you need discounted rooms hit me up. I get a discount at any Hilton chain, for as low as $29.00 a night ;)

I work for a Hampton Inn, which is an affiliate of Hilton. There are like 11 different hotels in the hilton family, and all of them are VERY nice =)

What's the Norwegian restaurant like? Scotty is Norwegian and I've always wondered about their cuisine :)

It is great food and very beautiful inside. There were several seafood items and tons of stuff for us vegetarian types. You should try it some time!

Yep - like Matt said, they have the sort of stuff you'd expect (like pickled herring, mackeral and fishy stuff) but they did have a lot of vegetarian options as well! They had a wide variety of cheeses (including a caramel-flavoured goat cheese which was really good), pasta, lots of unique breads, salads, vegetables (I had some mashed rutabaga which was awesome!) - yum!

Widow's Walk

I just wanted to stop in and say that I really love the new painting, it's probably my favorite out of all the ones I own from you. The concept was fantastic, the hints of red on an otherwise black and white painting... Weee.. I love it. Thank you for the wonderful work. - Kevin

i'm with erika on the question--i would picture norweigan cuisine to be dominated by smoked and fresh seafood. what sort of vegetarian goodness did they have there?
